Ah! I do not have any female skin tones overrides or otherwise in the game. It has only happened with NPCs and only mixologists, so far and they are only females. Got my restaurant hired a mixologists and there again, all black. My next course of action was to remove all my mods, created a new My Sims 4 folder and started replacing with my previous tray folder and each of my mods folder. Next, I took my EA skinoverride mod out started a new game placed the restaurant hired a mixologist a Voila! She is all black again! Mind you this are mixologist that the game generates. Switched the skintone and a piece of clothing just in case and took her back to the restaurant, she was all black still. Though about a bug in Sims 3, so I decided to take her back into CAS, in CAS she is fine. I hired a mixologist and when she got there, she was completely black, clothes and all.
